Sharonview Farm has produced literally tons of mushrooms since 2009 and sold them at local area Farmers Markets.  Mushrooms are light, so that is a lot of Shiitake mushrooms and happy customers.

What started out as a hobby has been such a pheonominal success  that we quit our day jobs and are now ramping up our farming operation.  To date, we have innoculated over 3000 logs!

​THE CAROLINA FOREST
   Since 1965 our family has been farming over 450 acres near Mineral Springs North Carolina.  Today most of the farm is hardwood forest and planted pine.  Our state guided Forest Management Program dictates
        that we cut out crowded and "non-value" trees.  A NC State agricultural class we attended in 2008 demonstrated the viability of mushroom cultivation utilizing the trees that were previously wasted after forest grooming.  Oaks, Cherry, Maple and Sweetgum trees are used as substrate to grow our mushrooms.  Growing on logs instead of sterilized sawdust gives our mushrooms exceptional flavor.  Large logs are drilled
 all over and the holes filled with spawn, sealed and laid in stacks in the deep, dark and damp woods of the pine forest.  The pine provide shelter from sun and wind all year so the logs won't dry out and the acidic pine needle floor holds moisture and deters mushroom competitors and mushroom pests. There the spawn grows roots within the log until mature enough to begin fruiting.  A few  mushrooms come out around the inocculation site the first year, in between the holes the second year and finally all over including the ends.  Complete colonization can take years depending upon the type of wood and growing conditions.    The logs will continue producing mushrooms until  completely decomposed in 5 to 10 years.  We still find mushrooms on little peices of logs on the ground around our first logs.

 We cut and harvest the logs from our forest in the fall after the leaves fall off.  This is when the sugars in the leaves have gone back into the wood.  This gives the logs the maximum potential for mushroom growth.  Then we let the newly cut logs "rest" up to a month to stabilize log moisture.
Our average log is 5 feet long and 8 inches in diameter.   About 40 holes 1/2 wide and 1/2 deep are drilled all around the log.  Each hole is filled with mushroom spawn grown from spores mixed with a little sawdust to keep it moist and crushed grain for the spawn to feed on until it roots into the wood.  Colonization takes a year or two depending upon the hardness of the wood and growing conditions..
The Inoculation sites on the logs as well as the ends of the logs are sealed with food grade cheese wax to protect the spawn and seal in moisture. The logs are then returned to the woods and stacked low under an evergreen canopy where the mushrooms will colonize the logs in the dark and damp forest.  They are beautiful, amazing and delicous!

               OTHERWISE THE MUSHROOMS BECOME DORMANT.    FRESH MUSHROOMS ARE MOST PLENTIFUL IN THE SPRING AND FALL.  WE GET SEVERAL "FLUSHES" OF OVER 100 POUNDS   
        "FRUITING" ALL AT ONE TIME.   THESE MUSHROOMS ARE FABULOUS FRESH,  BUT WE HAVE TO DRY MANY OF THESE MUSHROOMS.   THEN THEY CAN EASILY STORE FOR A YEAR OR MORE.
